I don't eat gluten. But I would like to eat bread. Will the gut test tell me if I am sensitive even though I do not eat gluten now?
No. If you have had no cross contamination with gluten, the anti-gliadin marker should NOT be elevated but if you have experienced cross contamination with gluten, and your body is reactive to it, the marker will appear elevated. The gold standart test for gluten sensitivity is a blood test, not a stool test. You can have a false negative result.
